Ingredients
1/2 cup of couscous or quinoa (cooked according to package directions in water)

Sorry guys that I’ve been so MIA
it’s been a mixture of post exam partying, then getting sick. I haven’t been working out/eating right in a while, but that stops TOMORROW.
The Workout:
-Warm up with Zuzana’s Burpees are Forever Workout
-30 minute strength training workout from the Nike Training Club app. I’ve heard great things about this so I can’t wait to try it out!
-5 km run (since it’s going to finally stop raining!)
The Meals:
breakfast/post workout - chocolate strawberry protein oatmeal
snack: carrots and hummus
lunch: banana peanut butter spinach smoothie, plus healthy cottage cheese cake
snack: salad (cucumbers, tomatoes, olives, red onions, feta cheese, yum!) and carrot muffin with cream cheese
dinner: carrot “cake” wrap + pineapples/yogurt for dessert

Seriously guys, I can’t explain it. But it just is. TRY IT :D
side note: it helps if they’re super thick, I thicken mine with xanthan gum :)

For those of you living in Canada, you know how frustrating it can be when things you want are only sold in the states (grrrrrrr damn you) and shipping costs an arm and a leg.
I really wanna try out PB2 (because I consume copious amounts of peanut butter.. way too much for my own good) but it’s only sold in the states and shipping was like 92.61$. 92.61$!!!!!!!! what. the. fuck. LOL
Allow me to introduce to you… The Low Carb Grocery. It carries a bunch of healthy groceries/natural foods/organic/low carb/YOU NAME IT. Real obscure stuff that I have never been able find at Loblaws or Metro or any other grocery store :(
Seriously, check it out. I can’t wait to visit it tomorrow: it’s only 20 minutes from my house. I foresee some serious damage in my bank account..

Red Velvet Chocolate (or Carob) Cake Pudding (adapted from a Doris Choi recipe)
Ingredients:
2 large beetroots, slow baked on low heat, skins removed
3 heaping tablespoons of raw cacao powder or carob powder
Zest of 1 lime
Zest of half a lemon (you can use just lemon or lime zest if you like)
2 teaspoons of vanilla extract
Stevia to taste
Pinch of sea salt
Drizzle of water to facilitate blending
Directions:
Place all ingredients in a blender with just enough water to facilitate blending. Only add enough water to allow the ingredients to blend.

Recipe for Zucchini Cakes at Life’s Ambrosia
Makes: 8 cakes
You will need:
- 1 large zucchni grated, excess water removed (Note: To do this, after you grate the zucchini, put the grated zucchini into paper towels and squeeze to release the water)
- 1/2 cup freshly grated Parmesan cheese
- 1 cup panko bread crumbs
- sprinkle of ground nutmeg, about 1/8 teaspoon (Note: If you add too much it can quickly take over the taste, less is more)
- 1/4 teaspoon paprika
- 1 clove garlic, minced
- 1 egg
- salt and pepper to taste
- 1-2 tablespoons olive oil
- Combine all ingredients, except olive oil, in a bowl and mix thoroughly. Using a heaping tablespoon form the mixture into 8 patties.
- Heat olive oil in a pan over medium heat. Once heated, add patties and cook until golden brown. About 3-4 minutes per side. Serve.
Making these this weekend for sho.. except I’m gonna bake them instead of frying :)

Easy Pesto Salad with Green Beans and Tomatoes
Ingredients
- ½ cup prepared basil pesto-recipe (next entry)
- ½ pound cooked pasta, al dente
- 2 cups cherry tomatoes, cut in half
- 1 cup green beans, ends trimmed
- Salt
Directions
- In a medium saucepan, bring water to a boil. Add salt and green beans. Blanch for a minute and take the beans out and transfer into a bowl of cold water (for them to retain the green color). Keep aside.
- In a medium serving bowl add the cooked pasta, tomatoes, green beans and pesto. Mix well, check for seasonings and serve.
